Aaloo (Potato) Sabji for Dosa
Ingredients:
- 2 large russet potatoes
- Pinch of asafetida (hing)
- 4-5 curry leaves
- 1/2 tsp turmeric powder
- 1 tsp mustard seeds
- 1 tsp ginger paste
- 1/4 tsp fenugreek (methi) seeds
- 2-3 finely chopped green chillies
- 1/2 cup finely chopped cilantro leaves
- 1 medium onion, finely chopped
- 1/2 tsp sugar
- 1 tbsp oil
- 1 tsp lemon juice
- Salt to taste
Preparation:
- Boil the potatoes until they are soft and let cool.
- Peel and chop the potatoes in small pieces.
- Heat the oil in a frying pan on medium high. Test the heat by adding one mustard seed to the oil. If it cracks right away, the oil is ready.
- Add the mustard seeds, curry leaves, methi seeds, green chillies and asafetida.
- Add the finely chopped onion and stir till mixture is soft and translucent.
- Add potatoes, turmeric, ginger paste, and salt.
- Stir-fry for a few minutes.
- The potatoes should be slightly moist and not very dry.
- Add lemon juice and garnish with cilantro.
